Smoked Pork Loin (Pit Boss Style)
Ingredients
- 1 pork loin (2–4 lbs)
- Yellow mustard (binder)
- TX ALL SEASONING (Original or Spicy Blend)
- 1/2 cup apple juice (for spritzing)
- Optional: 1–2 tbsp butter (for finishing)
- Trim excess fat/silver skin if needed
- Light coat of yellow mustard all over
- Generously season with TX ALL SEASONING (don’t be shy)
Pit Boss Setup
- Set grill to 225°F
- Use hickory, apple, or pecan pellets
- Place pork loin directly on grates
- Smoke until internal temp hits 135–140°F
- Spritz with apple juice every 30–45 minutes
- Increase grill temp to 350°F
- Sear until internal hits 145°F
- Add butter, wrap in foil at 140°F
- Finish to 145°F
- Let rest 10–15 minutes before slicing
